Xarel-lo |
One of the three grapes (along with Macabeo and
Parellada) that are used in the production of
the sparkling Spanish wine Cava. Xarel-lo is
found mainly in the northeastern region of
Catalonia. Though prone to frost damage, Xarel-lo
is a very productive and usually retains medium
to high levels of acidity. In the Alella region
of Catalonia, Xarel-lo (here known as Pansa
Blanca) is used to produce still wines that are
crisp and fresh, with notes of stone fruits,
cream and a sometimes vegetal quality.

Xynomavro |
The great red grape of Greece, where it can be
found almost everywhere. Xynomavro (Xinomavro)
is known for producing a wide variety of wines
that range from big and tannic reds to pleasant
rosés and sometimes even as the base for
sparkling wines (blanc de noirs). Xynomavro
ripens very late, while retaining high levels of
tannins, acidity and potential alcohol. The reds
can be hard in their youth, but they can age
well in both barrel and bottle. Aromas and
flavors of red fruits, earthen qualities, and
tannins are common. \r\n\r\nPerhaps the best
examples of Xynomavro are the wines of Nauossa
and Goumenissa (where it is blended with the
softer Negoska).
